Breakfast: Simple chia pudding

Eating chia pudding for breakfast is something I’ve done regularly since this New Year. My wish was to eat more healthier than I did before, and I feel I’m keeping it up pretty good. And that’s why I’ve included chia seeds, usually making a pudding and eating this in different ways, and I really love it :)

Unfortunately I had to stay at home today due to migraine, and I was not able to cook. Fortunately I’ve made some chia pudding, so I decided to eat this as a "late" breakfast, topped with some kiwi and dark mint chocolate. I’m not sure, but I actually felt better hereafter, but still not that well to cook anything. Luckily and surprisingly my parents came with food :D

Healthiness: Pinky Nicecream

pinknice4This weekend I got my bestie on a visit, so I decided to give this love a pleasant surprise, by serving pancakes for breakfast. I wanted it to be a healthy breakfast, so I therefore decided to make some nicecream to eat the pancakes with. I think making nicecream has become a huge trend at the moment, so I therefore wanted to try this too – everything healthy and vegetarian is a sure winner here ;)

The result came out very well, and was so beautiful. Even so yummy too! We both loved it, and my bestie even ate more of it than I did! ;) The one I made was a pink nana icecream/nicecream, and here’s the recipe:

Servings: 2

Ingredients:

  • 2 large bananas
  • 5-8 frozen raspberries
  • 2 teaspoons of almond milk (unsweetened as well as sweetened)

Instructions:

The night before:

Cut the bananas into cubes and freeze them. Also freeze some raspberries too (I used 8 of these).

In the morning:

Put the frozen bananas, raspberries and almond milk in a blender, and blend it all together on high speed. Make sure everything mixes well, and becomes smooth.

Voilá – the nicecream is ready! ;)

Serve with pancakes [as I did].

Note: this yummy nicecream can be served with anything else – let it be other unblended fruit, oats, chiaseed/chia pudding etc., or be eaten “clean”.
