Mexican inspired rice with a Middle East touch ;)

Hello everyone <3

I know, it’s been ages since I last posted a recipe, really sorry for that! :P I’ve been so busy writing about other stuff that I totally forgot everything about posting some of my vegetarian recipes.

Today I made this lovely dish, some kind of Mexican inspired food with a Middle East touch. I mostly hate making food for myself, but enjoy cooking food for others. Hm, well. That’s true :P Anyway, today I made this wonderful dish, as it is Vinayaga Chathurthi and I’ve been fasting the whole day – so I definitely need some proper food to eat – and I made it double so that I have something tomorrow for work ;)

Of course, as I'm a vegetarian I only added vegetables - but I'm pretty much sure about some kind of meat can be added too.

One pot tomato and chickpeas deliciousness

For the today’s dinner I decided to make a one pot dish, with loads of protein and some yummy veggies. You might know, that I really love aubergines and tomatoes too, so I decided to make a mix with these. It is actually something I tried at a cafe long ago, and I liked it so much. So I decided to make something like that – on my own, and you now what? The dish came out very well! ;)

I actually made a large amount of it, so that I also can have it some for my colleague W and I, for the lunch tomorrow. I hope she’ll like it too :)

Overnight chia oat pudding

Experimenting with food is something I love to do. You get so many different tastes and very lovely dishes out of this way of cooking. Honestly, cooking was definitely not my cup of tea until I turned 22-23 years old. Really don’t know why, but I thought it was difficult and very boring to live alone, and be cooking only for myself. But later, I changed a lot, and cooking became a kind of hobby to me. Many people ask me, if I have any difficulties in being a vegetarian, as they think it’s limited how delicious food vegetarians can make. But they’re wrong! There are many ways of getting nutritious, and at the same time lovely food being a vegetarian (or vegan). Experimenting with the flavours is the way ;)

Today I tried something new with the chia pudding for breakfast; I’ve earlier shared a recipe for a simple pudding. I actually used this pudding today, but added some other healthy things into it, and made this delicious chia-oat pudding instead ;)

Servings: 1

Prep time: 10 mins

Ingredients:

  • Overnight chia pudding
  • 4 tablespoons of oats
  • 4 dates
  • 1 teaspoon cocoa powder
  • 1 tablespoon of milk (any kind of milk can be added)
  • 3-4 cashew nuts

Instructions:

Put all the ingredients in a high speed blender, and blend it all together on high speed. Make sure it becomes smooth and is mixed well.

Serve the pudding as it is, or topped with free choice of fruits, nuts, raw coconut.

Ovnbagt vegetarisk risotto

ovnbagtrisSå er vi "langt om længe" kommet ind i det nye år - heldigvis gik jorden ikke under den 21.12.12, som mange sikkert havde frygtet :P Anyways, jeg håber I alle er kommet godt ind i det nye år, og håber vigtigst af alt, at denne 2013 vil bringe jer en masse glæde og uforglemmelige oplevelser! :)

Jeg er nu tilbage med en vildt lækker ret - ovnbagt risotto :)

Det at være vegetar, kan for nogle være mærkeligt, for hvorfor er man nu det, tror vegetarer at de er noget?? Næh, jeg tror skam ikke, at jeg er "noget", men føler mig godt tilfreds hver gang jeg har spist mit mæt i en vegetarisk måltid, og har altid denne følelse af god samvittighed. Jeg føler, at dét, at spise animalsk er en synd af en art. Det at slå ihjel, for selv at kunne overleve forekommer mig ikke særlig godt på nogen måder. Mange empiriske studier, og mange helt almindelige beretninger fra vegetarer har vist, at man sagtens kan klare sig, og leve sundt med en vegetarisk kost - så hvorfor så gå fra dette? :) Dette er ikke for at konkludere, at de, der spiser animalske produkter, er mindre gode mennesker eller hvad ved jeg - jeg vil bare ikke selv gøre det.
